African Peanut Stew is a hearty and flavorful dish that combines the richness of peanut butter with a variety of vegetables and spices. It's a comforting and nutritious meal that is perfect for chilly days.
Ingredients:
- 1 tbsp olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 inch fresh ginger, minced
- 2 sweet potatoes, peeled and diced
- 1 red bell pepper, diced
- 1 can 15 oz chickpeas, drained and rinsed
- 1 can 14 oz diced tomatoes
- 4 cups vegetable broth
- 1/2 cup natural peanut butter
- 1/4 cup tomato paste
- 1 tsp cumin
- 1/2 tsp smoked paprika
- 1/4 tsp cayenne pepper
- Salt and pepper to taste
- 1/4 cup chopped fresh cilantro, for garnish
- Cooked rice, for serving
Instructions:
In a large pot, heat olive oil over medium heat
Add onion, garlic, and ginger
Cook until softened, about 5 minutes
Stir in sweet potatoes, bell pepper, chickpeas, diced tomatoes, vegetable broth, peanut butter, tomato paste, cumin, smoked paprika, and cayenne pepper
Bring to a simmer and cook until sweet potatoes are tender, about 20-25 minutes
Season with salt and pepper to taste
Serve over cooked rice, garnished with chopped cilantro
