A delicious and comforting sweet potato casserole with a crispy marshmallow and pecan topping, perfect for holiday gatherings or any cozy dinner.
Ingredients:
- 4 large sweet potatoes, peeled and cubed
- 1/2 cup unsalted butter, melted
- 1/2 cup brown sugar
- 1/4 cup milk
- 2 eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1 cup mini marshmallows
- 1/2 cup chopped pecans
Instructions:
Preheat oven to 350F 175C
Place sweet potatoes in a large pot, cover with water, and bring to a boil
Cook until tender, about 15-20 minutes
Drain well
In a large mixing bowl, mash the sweet potatoes until smooth
Add melted butter, brown sugar, milk, eggs, vanilla extract, cinnamon, nutmeg, and salt
Mix until well combined
Transfer the mixture to a greased baking dish
Top with mini marshmallows and chopped pecans
Bake in the preheated oven for 25-30 minutes, or until the marshmallows are golden brown and the casserole is heated through
